Rough Draft Atlanta has partnered with the Community Farmers Market to let you know what’s in season at your local market. Each week, we’ll share a list of farm-fresh ingredients and some recipes with those ingredients you can try at home.

Atlanta nonprofit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. One of the organization’s strategies to improve food access in Atlanta is to operate five outdoor farmers markets and seven farm stands at MARTA stations every week. CFM also offers community education programs, financial incentives to make local food more affordable, and professional development for small businesses. See you at the farmers market!

Cheeseburger Salad Recipe:
material:
- 1 pound grass-fed ground beef
- 1 tomato (cherry tomato is fine too), chopped
- Lettuce (or Chinese cabbage!), chopped
- Onion slices
- Pickles + juice, seasoned with extra dill and fresh garlic, finely chopped
- Cheddar cheese (shredded)
- Gum
- Mayonnaise
- Spicy Mustard
- Lemon (for the zest and juice)
- Sweet Georgia Red Relish (or something similar – sweet and peppery/tomatoy!)
- Smoked paprika
- garlic powder
- A little salt and pepper
direction:
- Make the sauce: In a bowl, combine 1 cup mayonnaise, 1/4 cup spicy mustard, 1 tablespoon smoked paprika, 1/2 tablespoon garlic powder, 1 tablespoon pickle juice, and 1/4 cup sweet red relish.
- Over the bowl, peel half the lemon and cut half the lemon to extract the juice.
- Finely chop the pickles, about 1/4 cup or more depending on your taste, and add to the bowl.
- Mix everything together. Taste and adjust the ingredients if necessary. If you like it a little spicier, add some hot sauce or cayenne pepper. Place in the refrigerator.
- Make the beef: Add 1 teaspoon of oil to a frying pan and place over medium heat. Add the ground beef and break it into small pieces with a wooden spoon or spatula. Don’t mess with it too much for a few minutes; it should start to brown.
- Add 1 teaspoon salt, 1 teaspoon pepper, and 1 teaspoon garlic powder and mix well.
- Cook, stirring occasionally, until meat is cooked through (no pink left), then remove from heat. Taste and adjust seasoning to taste.
- Make a salad: Chop the pickles. Mix them with the lettuce, tomato and onion. You can decide the ratio according to your taste.
- Top with beef, cheese, sesame seeds, and the creamy sauce you made earlier.

Tomato, Peach and Whipped Feta Salad Recipe:

- tomato
- Fennel
- Feta cheese
- peach
- Herbs and garnishes of your choice (chef’s recommendations are dill, green onion, Greek yogurt, and salt)
direction:
- Thinly slice the fennel, rub with lemon and salt, and marinate for a few minutes.
- In a blender, add 3 tablespoons or 15 grams of feta cheese, ½ cup of yogurt, half a ripe peach, the juice of a lemon, and salt to taste. Beat until smooth.
- Slice the remaining peach half and cut the tomatoes into bite-sized pieces.
- Serve the whipped feta on a plate, top with fennel slices, a sprinkling of salt and garnish with any beautifully grown fresh fruit. You could also add some fennel fronds as a garnish.
- If you like, you can drizzle it with rich extra virgin olive oil or sprinkle it with Everything Bagel Seasoning.
