  • 2 cups vegan vanilla yogurt (plain is also fine)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 cup sliced ​​strawberries
  • 1/2 cup blueberries
  • 1/4 cup shredded coconut

Instructions

  1. Line a rimmed baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, combine 2 cups vegan yogurt, 1/4 cup maple syrup, and 1 teaspoon vanilla.
  3. Spread the sweetened yogurt mixture on a baking sheet lined with parchment paper.
  4. Top with 1 cup of sliced ​​strawberries, 1/2 cup of blueberries, and 1/4 cup of shredded coconut.
  5. Freeze until solid (about 2 hours).
  6. Cut it up and enjoy!
